Description

  • 1 pound sirloin steak (can substitute with ribeye or flank steak)
  • 2 tablespoons olive oil (can substitute with vegetable oil)
  • 1 medium onion (or use shallots)
  • 1 medium bell pepper (any variety works)
  • 2 cloves garlic (or use garlic powder)
  • 4 cups beef broth (can use vegetable broth)
  • 1 cup heavy cream (or use half-and-half)
  • 2 tablespoons Worcestershire sauce (or use soy sauce)
  • 1 teaspoon dried thyme (or use fresh thyme)
  • 1 teaspoon salt (to taste)
  • 1 teaspoon black pepper (to taste)
  • 8 ounces cream cheese (or substitute with mascarpone)
  • 1 cup shredded provolone or mozzarella cheese (can substitute with cheddar)

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the sirloin steak, seasoning it with salt and pepper. Cook until browned, about 5-7 minutes, then remove from the pot and set aside.
  2. In the same pot, add the onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the beef broth, scraping the bottom of the pot to remove any flavorful bits. Stir in the Worcestershire sauce, thyme, and the sautéed steak. Bring to a simmer.
  4. Reduce the heat to low, then add the heavy cream and cream cheese. Stir until the cheese is melted and the soup is creamy. Adjust seasoning with additional salt and pepper if desired.
  5. Top each serving with shredded provolone or mozzarella cheese, allowing it to melt slightly before serving.

Notes

Garnish each bowl with fresh chopped parsley or additional cheese for flavor. Serve with crusty bread or soft rolls.
