Description

Crispy taquitos filled with a creamy, flavorful mixture of shredded chicken, cream cheese, and spices.


Ingredients

  • 2 cups shredded cooked chicken
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1012 small flour or corn tortillas
  • Cooking spray or olive oil for brushing

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the shredded cooked chicken, softened cream cheese, shredded cheddar, salsa, garlic powder, onion powder, and cumin. Stir until creamy.
  3. If using corn tortillas, warm them in the microwave for about 20 seconds to make them pliable.
  4. Place 2-3 tablespoons of the filling on the lower third of each tortilla. Tightly roll the tortilla and place seam-side down on the baking sheet.
  5. Lightly brush or spray each taquito with olive oil or cooking spray.
  6. Bake for 15-18 minutes until golden brown and crispy.

Notes

Experiment with fillings and spices according to your preferences. Serve with salsa, guacamole, or sour cream.
