- 1 cup Minute Rice
- 6 tablespoons Unsalted Butter
- 4 cloves Garlic, minced
- 12–16 oz Extra Large Shrimp, peeled & deveined
- ¼ cup Shredded Parmesan Cheese
- 3 tablespoons Skim Milk
- 2 tablespoons Fresh Parsley, chopped
- Salt, to taste
- Fresh Ground Black Pepper
Instructions
- Cook the Rice: Prepare the minute rice according to package instructions; set aside to keep warm and fluffy.
- Make Garlic Butter: In a large skillet over medium heat, melt the butter. Add minced garlic and stir for 2–3 minutes until fragrant.
- Cook Shrimp: Add shrimp to the skillet and sauté for about 2 minutes or until shrimp turns pink and opaque.
- Combine Rice & Shrimp: Add the cooked rice to the skillet, mixing until everything is coated in the garlic butter sauce.
- Add Creaminess: Stir in Parmesan cheese, skim milk, parsley, salt, and pepper. Cook for an additional 1–2 minutes until creamy.
- Garnish & Serve: Garnish with extra Parmesan and parsley before serving.
