Description

A delightful twist on a classic side dish, this Jalapeño Popper Roasted Potato Salad combines creamy cheese, smoky bacon, and a hint of heat from jalapeños, all wrapped around tender roasted baby potatoes.


Ingredients

  • 2 pounds baby potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 4 slices bacon, cooked and crumbled
  • 2 medium jalapeños, diced
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the baby potatoes, then cut them in half or quarters, ensuring they’re evenly sized.
  3. Place the potatoes on a baking sheet and spread them evenly.
  4. Drizzle olive oil over the potatoes and sprinkle with garlic powder, smoked paprika, black pepper, and salt. Toss to coat.
  5. Roast the potatoes for 25 to 30 minutes, flipping halfway through, until golden brown and fork-tender.
  6. While the potatoes roast, cook the bacon until crispy, then crumble it.
  7. Dice the jalapeños, adjusting heat by removing seeds if desired.
  8. In a bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
  9. Add shredded cheddar cheese to the mixture and stir until well combined.
  10. Once the potatoes have cooled, transfer them to a large bowl and add the cream cheese mixture, bacon, jalapeños, green onions, and cilantro. Fold gently to combine.
  11. Sprinkle lime juice over the top and toss again. Serve warm, or chill for an hour to enhance flavors.

Notes

For a vegetarian version, replace bacon with smoked paprika. The dish can be made ahead of time and improves in flavor when chilled.
