Description

A light and airy Japanese Strawberry Cake featuring fluffy layers, macerated strawberries, and whipped cream for a delightful balance of sweetness and freshness.


Ingredients

  • 80 g (1/3 cup) whole milk
  • 50 g (3 1/2 tablespoons) unsalted butter
  • 75 g (1/2 cup + 1/2 tablespoon) cake flour
  • 4 large egg yolks
  • 4 large egg whites
  • 70 g (5 1/2 tablespoons) sugar
  • 340 g to 450 g strawberries (divided)
  • 1 1/2 teaspoons sugar
  • 280 g (10 oz) heavy whipping cream
  • 2 tablespoons confectioners sugar
  • 3/4 teaspoon gelatin (optional)
  • 2 tablespoons cold water (optional)
  • 2 tablespoons sugar
  • 3 tablespoons hot water

Instructions

  1. Prepare the cake: Preheat your oven to 170°C (340°F). In a small saucepan, warm the milk and butter together until melted. In a mixing bowl, whisk the egg yolks and sugar until light and fluffy, then mix in the milk and melted butter. Gradually add the cake flour and combine until smooth. In another bowl, whip the egg whites until stiff peaks form, then gently fold them into the yolk mixture. Pour the batter into a greased cake pan and bake for about 30 minutes or until a toothpick comes out clean.
  2. Prepare the macerated strawberries: While the cake is baking, slice the strawberries and sprinkle with 1 1/2 teaspoons of sugar. Toss gently and let them sit for about 20 minutes until they release their juices.
  3. Prepare the cream: Whip the heavy cream with confectioners sugar until soft peaks form. If using gelatin, dissolve it in cold water, then mix it with the hot water before adding it to the whipped cream.
  4. Assemble the cake: Once the cake has cooled, slice it into two equal layers. Place one layer on a serving plate, spoon on some macerated strawberries along with their juice, followed by whipped cream. Add the second layer on top and repeat the process. Top with more strawberries and whipped cream.

Notes

Chill your mixing bowl and beaters before whipping the cream for better results. Room temperature ingredients yield a fluffier cake.
