Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 2 tbsp jerk seasoning
  • 1 egg
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 (13.5 oz) can coconut milk
  • 2 tbsp curry powder
  • 1 cup chicken broth
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, jerk seasoning, egg, onion, garlic, salt, and pepper. Mix everything well until it’s fully incorporated.
  2. Roll the mixture into 1-inch meatballs and place them on a baking sheet.
  3. In a large skillet, heat a drizzle of oil over medium heat. Add the meatballs and cook for 2-3 minutes per side until browned.
  4. In the same skillet, pour in the coconut milk, curry powder, chicken broth, brown sugar, and soy sauce. Stir to combine.
  5. Bring the sauce to a simmer and let it cook for 10-15 minutes, allowing it to thicken.
  6. Gently add the cooked meatballs to the sauce and let them simmer for an additional 5 minutes to absorb the flavors.
  7. Before serving, garnish with fresh chopped cilantro.

Notes

Use a high-quality jerk seasoning for the best flavor and don’t overmix the meatball mixture for tenderness.
