- 8 oz Pasta (e.g., rotini or penne)
- 2 cups Corn (fresh or canned)
- 1 Red bell pepper, diced
- 1/2 Red onion, finely chopped
- 1 cup Cherry tomatoes, halved
- 1/2 cup Cilantro, chopped
- 1/4 cup Lime juice
- 1/4 cup Olive oil
- Salt and pepper to taste
- 1/2 tsp Chili powder (optional)
- 1 cup Feta cheese, crumbled (optional)
Instructions
- Cook the pasta according to package instructions. Drain and let it cool completely.
- In a large mixing bowl, combine the corn, diced bell pepper, finely chopped red onion, halved cherry tomatoes, and chopped cilantro.
- In a smaller bowl, whisk together the lime juice, olive oil, salt, pepper, and chili powder until well mixed.
- Add the cooled pasta to the vegetable mixture and pour the dressing over everything.
- Toss gently until all ingredients are well coated with the dressing.
- If you like, sprinkle with crumbled feta cheese for an added layer of flavor.
- Chill in the refrigerator for at least 30 minutes before serving.
