Description

A vibrant and refreshing pasta salad combining sweet corn, fresh vegetables, and a zesty lime dressing, perfect for summer meals.


Ingredients

  • 8 oz Pasta (e.g., rotini or penne)
  • 2 cups Corn (fresh or canned)
  • 1 Red bell pepper, diced
  • 1/2 Red onion, finely chopped
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Cilantro, chopped
  • 1/4 cup Lime juice
  • 1/4 cup Olive oil
  • Salt and pepper to taste
  • 1/2 tsp Chili powder (optional)
  • 1 cup Feta cheese, crumbled (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and let it cool completely.
  2. In a large mixing bowl, combine the corn, diced bell pepper, finely chopped red onion, halved cherry tomatoes, and chopped cilantro.
  3. In a smaller bowl, whisk together the lime juice, olive oil, salt, pepper, and chili powder until well mixed.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over everything.
  5. Toss gently until all ingredients are well coated with the dressing.
  6. If you like, sprinkle with crumbled feta cheese for an added layer of flavor.
  7. Chill in the refrigerator for at least 30 minutes before serving.
