- 1 lb Italian sausage
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 2 cloves garlic, minced
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a skillet, brown the Italian sausage over medium heat, breaking it apart as it cooks. Drain excess fat and transfer the sausage to a crockpot.
- Add the heavy cream, chicken broth, spinach, sun-dried tomatoes, Italian seasoning, garlic, salt, and pepper to the crockpot. Stir well to combine.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until flavors meld and spinach is wilted.
- Serve hot, garnished with grated Parmesan cheese.
Notes
For a vegetarian option, swap the sausage for sautéed mushrooms or a plant-based sausage alternative. Adjust the creaminess by modifying chicken broth or adding more heavy cream.
