Ingredients

  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a skillet, brown the Italian sausage over medium heat, breaking it apart as it cooks. Drain excess fat and transfer the sausage to a crockpot.
  2. Add the heavy cream, chicken broth, spinach, sun-dried tomatoes, Italian seasoning, garlic, salt, and pepper to the crockpot. Stir well to combine.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until flavors meld and spinach is wilted.
  4. Serve hot, garnished with grated Parmesan cheese.
