Ingredients

  • ¼ cup light brown sugar
  • 1 tsp vanilla extract
  • 23 tsp key lime zest
  • 1¾ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup powdered sugar
  • 1 tbsp key lime juice
  • 1 tbsp milk
  • ¼ tsp vanilla extract
  • Pinch of salt (optional)
  • ½ tsp key lime zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter with the sugar and brown sugar until light and fluffy. Add the egg, vanilla, and key lime zest, mixing until well combined.
  3. Whisk together the flour, baking soda, and salt in another bowl. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  4. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space for spreading.
  5. Bake for 10-12 minutes or until edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
  6. Whisk together the powdered sugar, key lime juice, milk, vanilla, and a pinch of salt for the glaze. Drizzle over cooled cookies and sprinkle with additional key lime zest if desired.

For thicker cookies, chill the dough for about 30 minutes before baking. Use fresh key lime zest for the best flavor.
