- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- Zest of one lemon
- 1 tablespoon dried culinary lavender
- 1/2 teaspoon baking powder
- Pinch of salt
- Additional powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish or line it with parchment paper.
- Cream together the softened butter and powdered sugar until light and fluffy. Gradually mix in the flour and a pinch of salt until combined. Press this mixture evenly into the bottom of the prepared baking dish.
- Bake the crust for about 20 minutes, or until lightly golden. While it bakes, prepare the filling.
- In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and dried lavender until well combined.
- Pour the filling mixture over the hot crust. Return to the oven and bake for an additional 25-30 minutes or until the filling is set and slightly golden on top.
- Allow the bars to cool completely in the pan before dusting with powdered sugar and cutting into squares.
