- 2 cups cooked rice
- 1 pound boneless, skinless chicken breasts
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen peas and carrots
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine cooked rice, cream of chicken soup, chicken broth, frozen peas and carrots, garlic powder, onion powder, salt, and pepper. Mix well.
- In a baking dish, drizzle olive oil and layer the chicken breasts at the bottom.
- Pour the rice mixture over the chicken, spreading it evenly.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 10-15 minutes until the chicken is cooked through and the cheese is melted and bubbly.
- Let it cool slightly before serving.
Notes
This casserole can be customized by adding different vegetables or spices. It’s great for leftovers, and can be stored in the fridge or freezer.
