Description

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 bunch asparagus, trimmed and cut into pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Bring vegetable broth to a boil and add orzo pasta. Cook according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute.
  3. Add asparagus pieces to the skillet and cook until tender, about 4-5 minutes.
  4. Stir in the cooked orzo, lemon juice, lemon zest, salt, and pepper. Mix well to combine all ingredients.
  5. Serve warm, garnished with fresh parsley if desired.
