- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 bunch asparagus, trimmed and cut into pieces
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Juice and zest of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Bring vegetable broth to a boil and add orzo pasta. Cook according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute.
- Add asparagus pieces to the skillet and cook until tender, about 4-5 minutes.
- Stir in the cooked orzo, lemon juice, lemon zest, salt, and pepper. Mix well to combine all ingredients.
- Serve warm, garnished with fresh parsley if desired.
Notes
Be mindful not to overcook the orzo for the best texture. Use fresh lemon juice for the brightest flavor.
