Description

A light and airy dessert that beautifully balances the tartness of fresh lemons with the sweetness of ripe blueberries, perfect for any occasion.

Ingredients

Scale
  • 1 cup lemon juice
  • 1 cup blueberries
  • 2 cups whipped cream
  • 1/2 cup sugar
  • 1 packet gelatin (optional)
  • 1 cup graham cracker crumbs (for crust, optional)
  • Butter (for crust, optional)

Instructions

  1. If making a crust, mix graham cracker crumbs with melted butter and press into the bottom of a cake pan. Refrigerate for 10 minutes.
  2. In a bowl, combine lemon juice and sugar, stirring until the sugar dissolves completely.
  3. Gently fold in the whipped cream until smooth and well combined.
  4. Carefully add the blueberries to the mixture, making sure not to crush them too much.
  5. Pour the mousse mixture over the crust in the cake pan or serve directly in cups.
  6. Refrigerate for at least 2 hours to set before serving.

Notes

Use fresh ingredients for the best flavor. Consider chilling tools for a better whipped cream volume.
