- 4 boneless, skinless chicken breasts, sliced in half lengthwise
- Kosher salt and freshly cracked black pepper, to taste (about 1 teaspoon each)
- 2 to 3 tablespoons extra-virgin olive oil
- 3/4 cup all-purpose flour
- 4 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1 lemon, thinly sliced
- 1/4 cup freshly squeezed lemon juice
- Pinch of salt and pepper
- Chopped fresh parsley, for serving
Instructions
- Preheat your oven to 350°F (175°C).
- Pound the chicken breasts until even in thickness.
- Season both sides with kosher salt and black pepper.
- Warm a skillet over medium heat and add olive oil.
- Coat chicken in flour and shake off excess.
- Sear chicken in the skillet for 3 to 4 minutes per side until golden brown.
- Transfer chicken to a baking dish.
- Lower heat to medium-low, add butter and garlic, and sauté until fragrant.
- Add lemon slices and juice to the skillet; cook for 2-3 minutes.
- Season sauce and pour it over the chicken in the baking dish.
- Bake for 15 to 20 minutes or until chicken reaches 165°F (75°C).
- Garnish with parsley and serve warm.

For freshness, always use freshly squeezed lemon juice. This dish pairs well with white wine and can be customized for different dietary needs.
