Ingredients

  • 4 boneless, skinless chicken breasts, sliced in half lengthwise
  • Kosher salt and freshly cracked black pepper, to taste (about 1 teaspoon each)
  • 2 to 3 tablespoons extra-virgin olive oil
  • 3/4 cup all-purpose flour
  • 4 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1 lemon, thinly sliced
  • 1/4 cup freshly squeezed lemon juice
  • Pinch of salt and pepper
  • Chopped fresh parsley, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Pound the chicken breasts until even in thickness.
  3. Season both sides with kosher salt and black pepper.
  4. Warm a skillet over medium heat and add olive oil.
  5. Coat chicken in flour and shake off excess.
  6. Sear chicken in the skillet for 3 to 4 minutes per side until golden brown.
  7. Transfer chicken to a baking dish.
  8. Lower heat to medium-low, add butter and garlic, and sauté until fragrant.
  9. Add lemon slices and juice to the skillet; cook for 2-3 minutes.
  10. Season sauce and pour it over the chicken in the baking dish.
  11. Bake for 15 to 20 minutes or until chicken reaches 165°F (75°C).
  12. Garnish with parsley and serve warm.

For freshness, always use freshly squeezed lemon juice. This dish pairs well with white wine and can be customized for different dietary needs.
