  • 3 cups all-purpose flour (360g)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sugar (50g, for rolling cookies)

Instructions

  1. Mix the Base: In a mixing bowl, beat the butter, granulated sugar, and lemon zest together using an electric mixer for about 1-2 minutes.
  2. Add Eggs and Lemon: Pour in the fresh lemon juice and crack in the egg. Mix again until everything is well combined.
  3. Incorporate Dry Ingredients: Gradually sift in the flour, baking soda, and salt. Switch to using a spatula to mix until the dry ingredients are just combined.
  4. Chill the Dough: Cover the bowl with plastic wrap and refrigerate for 30-60 minutes.
  5. Preheat and Prepare: Once chilled, remove the dough and preheat your oven to 350ºF.
  6. Shape and Bake: Use a cookie scoop to form balls of dough, rolling each in sugar. Place them on a silicone-lined baking sheet and bake for 11-13 minutes.
  7. Cool Down: Let the cookies sit on the baking sheet for about 5 minutes before transferring them to a cooling rack.
