Description

Ingredients

  • 1/2 cup Powdered sugar
  • 1/2 cup Unsalted butter, softened
  • 1/4 teaspoon Salt
  • 2 Large eggs
  • 1 cup Granulated sugar
  • 1/4 cup Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 1/4 teaspoon Baking powder
  • Powdered sugar for dusting, as needed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. Combine the flour, powdered sugar, softened butter, and salt until it resembles coarse crumbs.
  3. Press this mixture into the bottom of the prepared pan.
  4. Bake the crust for 15-20 minutes or until the edges are lightly golden.
  5. Whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth.
  6. Pour the lemon filling over the baked crust and bake for an additional 20-25 minutes until set.
  7. Cool completely in the pan, dust with powdered sugar, then cut into squares and serve.
