- 1/4 teaspoon Baking powder
- Powdered sugar for dusting, as needed
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- Combine the flour, powdered sugar, softened butter, and salt until it resembles coarse crumbs.
- Press this mixture into the bottom of the prepared pan.
- Bake the crust for 15-20 minutes or until the edges are lightly golden.
- Whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon filling over the baked crust and bake for an additional 20-25 minutes until set.
- Cool completely in the pan, dust with powdered sugar, then cut into squares and serve.
