Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the flour, powdered sugar, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  2. Prepare the crust by adding the egg yolk to the flour mixture and mixing until combined. Press the mixture into the bottom of a tart pan and bake for about 15-20 minutes until light golden brown.
  3. Make the lemon curd filling by whisking together lemon juice, lemon zest, granulated sugar, and eggs in a saucepan. Heat over medium heat, stirring constantly until thickened.
  4. Pour the lemon curd filling into the baked crust and return to the oven for an additional 10 minutes.
  5. Cool at room temperature, then refrigerate for at least 2 hours before serving.

Notes

Serve with a dollop of whipped cream, fresh berries, or toasted coconut for added texture.
