- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). In a large bowl, combine the flour, powdered sugar, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Prepare the crust by adding the egg yolk to the flour mixture and mixing until combined. Press the mixture into the bottom of a tart pan and bake for about 15-20 minutes until light golden brown.
- Make the lemon curd filling by whisking together lemon juice, lemon zest, granulated sugar, and eggs in a saucepan. Heat over medium heat, stirring constantly until thickened.
- Pour the lemon curd filling into the baked crust and return to the oven for an additional 10 minutes.
- Cool at room temperature, then refrigerate for at least 2 hours before serving.
