Ingredients

  • 1 cup granulated sugar

  • 1/2 teaspoon salt
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine crushed shortbread cookies and melted butter in a bowl until crumbly.
  3. Press the mixture into a tart pan to form a crust.
  4. Bake the crust for 10-12 minutes or until lightly golden, then let it cool.
  5. Whisk together sugar, eggs, lemon juice, lemon zest, cornstarch, and salt until smooth.
  6. Pour the lemon mixture into the cooled crust.
