Ingredients

  • 1.5 to 1.75 pounds skin-on salmon fillet
  • 1 lemon (sliced into thin rounds)
  • 1/2 cup unsalted butter (melted)
  • 3 tablespoons lemon juice (from about 1 lemon)
  • 2 to 3 tablespoons honey
  • 5 cloves garlic (finely pressed or minced; or to taste)
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)
  • 2 teaspoons finely chopped fresh parsley (optional for garnishing)

Instructions

  1. Preheat your oven to 375°F. Prepare a sheet of foil, and place the salmon on it with the skin-side down.
  2. Raise the edges of the foil about 2 inches to contain the melted buttery mixture.
  3. Nestle lemon slices underneath the salmon, spaced evenly around the fillet.
  4. Melt the butter in a microwave-safe dish for about a minute. Stir in the lemon juice, honey, and garlic.
  5. Pour three-quarters of this mixture over the salmon, saving the rest for later.
  6. Season the salmon with salt and pepper, and crimp the foil tightly.
  7. Let it marinate for 10 to 15 minutes to soak in those delightful flavors.
  8. Place the foil pack on a baking sheet and bake for about 17 minutes.
  9. Carefully open the foil pack to expose the salmon, then broil for an additional 5 to 10 minutes.
  10. Garnish with parsley if desired and serve immediately.
