  • 4 cups powdered sugar
  • 1/4 teaspoon salt
  • 1 tablespoon cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy, about 3-5 minutes.
  4. Add the lemon zest and mix well, then add the eggs one at a time, mixing thoroughly after each addition. Incorporate the vanilla extract.
  5. Gradually mix in the sour cream and lemon juice until smooth.
