Description

Ingredients

  • 1 box cake mix (lemon flavor)
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1 cup water
  • 2 tablespoons poppy seeds
  • 1 tablespoon lemon zest
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix the cake mix, eggs, vegetable oil, and water in a large bowl until smooth.
  3. Add the poppy seeds, lemon zest, and lemon juice, and stir until combined.
  4. Fill each muffin cup about two-thirds full with batter.
  5. Bake for 15-20 minutes until a toothpick comes out clean.
  6. Cool the muffins in the pan for a few minutes before transferring to a wire rack.

Notes

For a vegan version, replace eggs with flax eggs. Can also be made gluten-free with a suitable cake mix.
