- 1 box cake mix (lemon flavor)
- 3 large eggs
- 1/3 cup vegetable oil
- 1 cup water
- 2 tablespoons poppy seeds
- 1 tablespoon lemon zest
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the cake mix, eggs, vegetable oil, and water in a large bowl until smooth.
- Add the poppy seeds, lemon zest, and lemon juice, and stir until combined.
- Fill each muffin cup about two-thirds full with batter.
- Bake for 15-20 minutes until a toothpick comes out clean.
- Cool the muffins in the pan for a few minutes before transferring to a wire rack.
Notes
For a vegan version, replace eggs with flax eggs. Can also be made gluten-free with a suitable cake mix.
