Description

Lemon rhubarb bars are a delightful treat that perfectly balance sweet and tart flavors, making them an irresistible dessert option.


Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Sugar
  • 1/2 cup Unsalted butter, softened
  • 1/4 teaspoon Salt
  • 2 cups Chopped rhubarb
  • 1/2 cup Fresh lemon juice
  • 1 cup Sugar
  • 3 Large eggs
  • 1/4 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a mixing bowl, combine 1 cup of flour, 1/2 cup of sugar, softened butter, and salt. Mix until crumbly. Press the mixture into the bottom of the prepared dish to form a crust.
  3. In a separate bowl, combine the chopped rhubarb, lemon juice, 1 cup of sugar, eggs, 1/4 cup of flour, baking powder, and lemon zest. Whisk until well combined.
  4. Pour the rhubarb mixture over the crust.
  5. Bake for 30-35 minutes or until the center is set.
  6. Allow to cool, then cut into bars and serve.

Notes

Use fresh rhubarb for the best flavor and let the bars cool completely for easier cutting.
