- 1 cup All-purpose flour
- 1/2 cup Sugar
- 1/2 cup Unsalted butter, softened
- 1/4 teaspoon Salt
- 2 cups Chopped rhubarb
- 1/2 cup Fresh lemon juice
- 1 cup Sugar
- 3 Large eggs
- 1/4 cup All-purpose flour
- 1 teaspoon Baking powder
- 1 teaspoon Lemon zest
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
- In a mixing bowl, combine 1 cup of flour, 1/2 cup of sugar, softened butter, and salt. Mix until crumbly. Press the mixture into the bottom of the prepared dish to form a crust.
- In a separate bowl, combine the chopped rhubarb, lemon juice, 1 cup of sugar, eggs, 1/4 cup of flour, baking powder, and lemon zest. Whisk until well combined.
- Pour the rhubarb mixture over the crust.
- Bake for 30-35 minutes or until the center is set.
- Allow to cool, then cut into bars and serve.
Notes
Use fresh rhubarb for the best flavor and let the bars cool completely for easier cutting.
