- For icing: 1 cup powdered sugar, 2 tablespoons lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Beat in the egg, lemon juice, and lemon zest.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten them slightly with the bottom of a glass.
- Bake for 8-10 minutes or until the edges are lightly golden.
- Mix the powdered sugar with lemon juice for icing until smooth.
- Drizzle the icing on top of cooled cookies.
