- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 1/2 cup Unsalted butter, softened
- 1 cup Buttermilk
- 3 Large eggs
- 1/4 cup Fresh lemon juice
- 1 tablespoon Lemon zest
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla extract
- 1/4 teaspoon Cream of tartar
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease and flour two 9-inch round cake pans.
- Cream together the softened butter and granulated sugar until it’s light and fluffy.
- Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition.
- Mix in the fresh lemon juice, lemon zest, and vanilla extract.
- Whisk together the all-purpose flour, baking powder, baking soda, and salt in another bowl.
- Gradually add the dry mixture to the wet ingredients, alternating with buttermilk.
- Pour the batter evenly into the prepared pans and gently tap them to remove air bubbles.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in their pans for about 10 minutes, then transfer them to wire racks to cool completely.
- Frost with your favorite lemon frosting and enjoy!
Notes
For better creaming, ensure butter is at room temperature. Alternate adding dry and wet ingredients to prevent overmixing.
