- 1 tbsp olive oil
- 1 bay leaf
- 1 cup dry green or brown lentils
- 2 carrots, sliced
- 4 cups vegetable broth
- 1 onion, diced
- 1 tsp thyme
- Salt and pepper, to taste
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup milk
- 4 tbsp butter
- 4 large potatoes, peeled and chopped
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Cook for about 5-7 minutes until the vegetables have softened.
- Stir in minced garlic and cook for an additional minute until fragrant. Then, add lentils, diced tomatoes, vegetable broth, thyme, and bay leaf.
- Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer uncovered for 25-30 minutes, or until lentils are soft and tender.
- While the stew cooks, place the peeled and chopped potatoes into a pot of salted water. Boil until tender, around 15-20 minutes. Drain cooked potatoes.
- Mash the potatoes with butter, milk, salt, and pepper until smooth and creamy.
- Serve the lentil stew generously over the warm, creamy mashed potatoes.
Notes
For a richer flavor, warm the milk before adding it to the mashed potatoes. This recipe can also be made vegan by substituting plant-based milk and butter.
