Description

A heartwarming classic combining hearty lentil stew served over creamy mashed potatoes, perfect for any family dinner or casual gathering.


Ingredients

  • 1 tbsp olive oil
  • 1 bay leaf
  • 1 cup dry green or brown lentils
  • 2 carrots, sliced
  • 4 cups vegetable broth
  • 1 onion, diced
  • 1 tsp thyme
  • Salt and pepper, to taste
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup milk
  • 4 tbsp butter
  • 4 large potatoes, peeled and chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and chopped celery. Cook for about 5-7 minutes until the vegetables have softened.
  2. Stir in minced garlic and cook for an additional minute until fragrant. Then, add lentils, diced tomatoes, vegetable broth, thyme, and bay leaf.
  3. Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer uncovered for 25-30 minutes, or until lentils are soft and tender.
  4. While the stew cooks, place the peeled and chopped potatoes into a pot of salted water. Boil until tender, around 15-20 minutes. Drain cooked potatoes.
  5. Mash the potatoes with butter, milk, salt, and pepper until smooth and creamy.
  6. Serve the lentil stew generously over the warm, creamy mashed potatoes.

Notes

For a richer flavor, warm the milk before adding it to the mashed potatoes. This recipe can also be made vegan by substituting plant-based milk and butter.
