- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 teaspoon baking powder
- Pinch of salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish to prevent sticking.
- Combine the all-purpose flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of the prepared dish to form a crust.
- Bake the crust for about 20 minutes or until lightly golden.
- Whisk together the eggs, granulated sugar, fresh lime juice, lime zest, baking powder, and a pinch of salt until well combined and frothy.
- Pour the lime mixture over the pre-baked crust.
- Bake for an additional 20-25 minutes, or until the center is set.
- Allow the bars to cool completely in the pan before dusting with powdered sugar and cutting them into squares.
Notes
Serve chilled and dust with powdered sugar just before serving. Store in the refrigerator for freshness.
