Description

Delicious quesadillas filled with ground turkey, colorful bell peppers, and gooey cheese, perfect for a quick dinner or snack.


Ingredients

  • 1 lb ground turkey
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Cooking oil for frying as needed
  • Sour cream for serving
  • Salsa for serving

Instructions

  1. Heat a little oil in a skillet over medium heat. Add diced onion and bell peppers, and sauté until softened (about 3-5 minutes).
  2. Add the ground turkey along with garlic powder, cumin, paprika, salt, and pepper. Cook until browned and fully cooked (7-10 minutes), stirring occasionally.
  3. Remove from heat and stir in the shredded cheese until melted.
  4. Heat another skillet over medium heat and oil it lightly.
  5. Place a tortilla in the skillet, spread some turkey and cheese mixture on half, and fold over.
  6. Cook until golden and crispy (about 3-4 minutes on each side).
  7. Repeat with remaining tortillas and filling.
  8. Cut into wedges and serve with sour cream and salsa.

Notes

For a spicier kick, add diced jalapeños. Feel free to customize fillings based on your preference.
