- 1 lb ground turkey
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup bell peppers, diced
- 1/2 cup onion, diced
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 4 large flour tortillas
- Cooking oil for frying as needed
- Sour cream for serving
- Salsa for serving
Instructions
- Heat a little oil in a skillet over medium heat. Add diced onion and bell peppers, and sauté until softened (about 3-5 minutes).
- Add the ground turkey along with garlic powder, cumin, paprika, salt, and pepper. Cook until browned and fully cooked (7-10 minutes), stirring occasionally.
- Remove from heat and stir in the shredded cheese until melted.
- Heat another skillet over medium heat and oil it lightly.
- Place a tortilla in the skillet, spread some turkey and cheese mixture on half, and fold over.
- Cook until golden and crispy (about 3-4 minutes on each side).
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve with sour cream and salsa.
Notes
For a spicier kick, add diced jalapeños. Feel free to customize fillings based on your preference.
