- 1 cup black beans, drained and rinsed

- Salt and pepper to taste

Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
- Heat a skillet over medium heat and cook the ground beef or chicken until browned. Add the diced bell pepper and sauté until softened.
