Description

Ingredients

  • 1 lb ground beef or chicken
  • 1 cup corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
