- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup shredded cheddar cheese
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving

Instructions
- Preheat your oven to 425ยฐF (220ยฐC).
- Spread the diced potatoes on a baking sheet and drizzle with olive oil. Season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Bake the potatoes for about 25-30 minutes, flipping halfway through.
- In a skillet over medium heat, cook the ground beef or turkey until browned and drained of excess fat.
- Add chili powder, cumin, and chopped red onion to the skillet and cook until the onion is translucent.
- Mix in black beans and corn, heating through for an additional 3-4 minutes.
- Divide the crispy potatoes among serving bowls, topping with the meat mixture, cheese, tomatoes, avocado, and cilantro.
- Serve with lime wedges and a dollop of sour cream.
