- 4 large russet potatoes
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 4 slices of crispy bacon, crumbled
- 1 cup sour cream
- 1 ripe avocado, diced
- 1 cup diced tomatoes
- ½ cup sliced green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes, then poke holes in them with a fork. Place them directly on the oven rack and bake for about 45 minutes, or until tender.
- While the potatoes are baking, heat a skillet over medium heat. Add the ground beef or turkey, cooking until browned. Drain excess fat and stir in the taco seasoning with a splash of water. Allow it to simmer for about 5 minutes.
- As the meat cooks, prepare your toppings. Crumble the crispy bacon, dice the avocado and tomatoes, and slice the green onions.
- Once the potatoes are done, carefully slice them open and fluff the insides with a fork. Top each potato with a generous scoop of the seasoned meat, shredded cheese, crumbled bacon, sour cream, avocado, tomatoes, and green onions.
