- 2 large potatoes
- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup chopped lettuce
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
- 1/2 cup salsa
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then rub with olive oil, salt, and pepper. Bake for about 45 minutes or until tender.
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat and add taco seasoning, cooking according to packet instructions.
- Once the potatoes are baked, let them cool slightly before slicing in half and fluffing the insides.
- Assemble the taco bowl by adding the beef mixture on top of the potatoes, followed by cheese, sour cream, lettuce, tomatoes, green onions, and salsa.
- Serve immediately and enjoy!
