- 1 pound ground beef
- 8 ounces pasta (elbow or penne)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup sour cream (optional)
- Chopped green onions (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, brown the ground beef over medium heat. Drain excess fat if necessary.
- Add taco seasoning, beans, corn, and salsa to the skillet. Stir to combine and heat through.
- In a large mixing bowl, combine the cooked pasta, beef mixture, and 1 cup of shredded cheese.
- Transfer the mixture to a greased baking dish and top with remaining cheese.
- Cover with foil and bake for 25 minutes. Then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let cool slightly before serving, and garnish with chopped green onions and sour cream if desired.
