Description

Mafé is a rich and hearty Senegalese peanut stew featuring tender meat or vegetables in a creamy peanut sauce, perfect for cozy dinners.


Ingredients

  • 1 lb beef or chicken, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups sweet potatoes, diced
  • 1 cup carrots, sliced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 cup peanut butter
  • 4 cups chicken or vegetable broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Chili pepper (optional)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add onion, garlic, and ginger; sauté until translucent.
  2. Add the meat and cook until browned on all sides.
  3. Stir in sweet potatoes, carrots, bell pepper, and diced tomatoes.
  4. Add peanut butter and broth, mixing until smooth.
  5. Bring to a boil, then reduce heat and simmer until meat and vegetables are tender (about 30-40 minutes).
  6. Season with salt, pepper, and chili pepper if desired, adjusting the heat to your preference.
  7. Serve hot, often with rice.
