- 2 cups sweet potatoes, diced
- 1 cup carrots, sliced
- 1 bell pepper, chopped
- 1 can (14 oz) diced tomatoes
- 1 cup peanut butter
- 4 cups chicken or vegetable broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Chili pepper (optional)
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add onion, garlic, and ginger; sauté until translucent.
- Add the meat and cook until browned on all sides.
- Stir in sweet potatoes, carrots, bell pepper, and diced tomatoes.
- Add peanut butter and broth, mixing until smooth.
- Bring to a boil, then reduce heat and simmer until meat and vegetables are tender (about 30-40 minutes).
- Season with salt, pepper, and chili pepper if desired, adjusting the heat to your preference.
- Serve hot, often with rice.
