- 1 pound breakfast sausage
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 2 cups bread cubes
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 4 green onions, sliced
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F and grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook the breakfast sausage until browned and crumbly. Drain excess grease.
- In the same skillet, sauté diced bell peppers and sliced green onions for 2-3 minutes until softened.
- In a large bowl, whisk together eggs, milk, shredded cheese, salt, and pepper. Gently fold in the cooked sausage, sautéed vegetables, and bread cubes.
- Pour the mixture into the prepared baking dish, spreading it evenly.
- Bake for 35-50 minutes, or until the edges are set and the center is slightly jiggly.
- Let cool for a few minutes before slicing and serving.
Notes
For best results, use day-old bread to prevent sogginess, and feel free to customize with your favorite veggies or cheese.
