Ingredients

  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 2 cups bread cubes
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 4 green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the breakfast sausage until browned and crumbly. Drain excess grease.
  3. In the same skillet, sauté diced bell peppers and sliced green onions for 2-3 minutes until softened.
  4. In a large bowl, whisk together eggs, milk, shredded cheese, salt, and pepper. Gently fold in the cooked sausage, sautéed vegetables, and bread cubes.
  5. Pour the mixture into the prepared baking dish, spreading it evenly.
  6. Bake for 35-50 minutes, or until the edges are set and the center is slightly jiggly.
  7. Let cool for a few minutes before slicing and serving.
