Ingredients
Scale
- 1 tablespoon olive oil
- 1 pound kielbasa sausage, sliced into ¼-inch rounds
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, sliced into half-moons
- 16 ounces shelf-stable potato gnocchi
- ¾ cup chicken broth
- ½ cup heavy cream
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ¼ teaspoon salt (optional)
- 1 cup shredded mozzarella or cheddar cheese

- In the same skillet, sauté the diced onion until translucent for about 3 minutes. Add minced garlic, diced red bell pepper, and sliced zucchini. Cook for an additional 4–5 minutes.
- Stir in the potato gnocchi and let cook for 2–3 minutes until slightly golden sear.
- Pour in chicken broth and heavy cream. Season with paprika, black pepper, and salt (if needed), stirring well to combine.
- Return the browned kielbasa to the skillet, cover, and let simmer for about 5–6 minutes.
- Sprinkle shredded cheese over the top and cover again for 1–2 minutes until the cheese melts.
- Garnish with fresh chopped parsley and serve hot.
Notes
Use high-quality kielbasa for best flavor. Adjust seasoning according to your taste preference, especially saltiness.
