Ingredients

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced into ¼-inch rounds
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, sliced into half-moons
  • 16 ounces shelf-stable potato gnocchi
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt (optional)
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. In a large skillet over medium heat, add the olive oil and sliced kielbasa. Cook until browned on both sides, about 4–5 minutes. Remove the kielbasa and set aside.
  2. In the same skillet, sauté the diced onion until translucent for about 3 minutes. Add minced garlic, diced red bell pepper, and sliced zucchini. Cook for an additional 4–5 minutes.
  3. Stir in the potato gnocchi and let cook for 2–3 minutes until slightly golden sear.
  4. Pour in chicken broth and heavy cream. Season with paprika, black pepper, and salt (if needed), stirring well to combine.
  5. Return the browned kielbasa to the skillet, cover, and let simmer for about 5–6 minutes.
  6. Sprinkle shredded cheese over the top and cover again for 1–2 minutes until the cheese melts.
  7. Garnish with fresh chopped parsley and serve hot.

Notes

Use high-quality kielbasa for best flavor. Adjust seasoning according to your taste preference, especially saltiness.
