- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/4 cup cold water
- 4 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- 1 cup mango puree
- 1/2 cup fresh lime juice
- 1/4 cup sugar (for mango curd)
- 1 tablespoon lime zest
- Whipped cream or fresh fruit for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually stir in cold water, form into a dough, wrap in plastic, and refrigerate for 30 minutes.
- Roll out the dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork and bake for 15-20 minutes or until golden.
- In a saucepan, whisk together egg yolks, condensed milk, mango puree, lime juice, sugar, and lime zest over medium heat until thickened.
- Pour the mango curd into the cooled tart shell and level it out.
- Chill the tart in the refrigerator for at least 2 hours.
- Serve topped with whipped cream or fresh fruit.
Notes
Chill your butter for a flaky crust. Use fresh mango for best flavor. Don’t skip chilling the tart before serving.
