Description

A delightful combination of tender chicken, roasted sweet potatoes, and fresh spinach, all topped with a unique maple Dijon sauce.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, diced
  • 3 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach leaves
  • 1/4 cup chopped fresh parsley (optional, for garnish)
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil (for sauce)
  • Salt and pepper to taste (for sauce)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a large mixing bowl.
  3. Spread seasoned sweet potatoes on a lined baking sheet and roast for 25-30 minutes, turning halfway.
  4. In a large non-stick skillet over medium-high heat, add diced chicken seasoned with salt and pepper. Cook for 6-8 minutes until golden-brown, then set aside.
  5. Whisk together Dijon mustard, maple syrup, apple cider vinegar, olive oil, salt, and pepper in a small bowl to make the maple Dijon sauce.
  6. Add cooked chicken back into the skillet and pour over the maple Dijon sauce. Stir to coat and cook for an additional 2-3 minutes until the sauce thickens slightly.
  7. Assemble the bowls by dividing the roasted sweet potatoes and maple Dijon chicken into bowls. Top with fresh spinach and garnish with parsley if desired.
