Description

Flavorful and nutritious roasted vegetables coated with a sweet and tangy maple Dijon glaze, perfect as a side dish for any meal.


Ingredients

  • 1 lb baby potatoes, halved
  • 2 cups Brussels sprouts, trimmed and halved
  • 1 large carrot, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the baby potatoes, Brussels sprouts, carrot, red bell pepper, and red onion.
  3. In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, garlic powder, salt, and pepper.
  4. Pour the maple Dijon mixture over the vegetables and toss gently until evenly coated.
  5. Spread the vegetables out in a single layer on the baking sheet and roast for 25-30 minutes, stirring halfway through, until tender and caramelized.
  6. Remove from the oven and sprinkle with fresh parsley before serving.
