Description

Enjoy a delightful medley of roasted winter vegetables infused with sweet maple syrup and tangy Dijon mustard, perfect as a side dish or main course.


Ingredients

  • Assorted winter vegetables (carrots, Brussels sprouts, turnips, parsnips)
  • 2 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the assorted vegetables into uniform pieces.
  3. In a large bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, and pepper.
  4. Add the chopped vegetables to the bowl and toss to coat well in the dressing.
  5. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  6. Roast the vegetables for 25-30 minutes, stirring halfway through.
  7. Remove from the oven and garnish with fresh herbs if desired. Serve warm.
