- 1¾ cups all-purpose flour
- 1¼ cups canned pumpkin puree
- ½ cup granulated sugar
- 2 large eggs
- ½ cup canola oil
- 1 teaspoon baking powder
- 1½ teaspoons pumpkin pie spice
- 3 tablespoons brown sugar (for topping)
- ½ cup chopped pecans or walnuts (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine chopped nuts, brown sugar, a bit of flour, cinnamon, and salt; stir in melted butter for the topping.
- In another bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
- In a large bowl, beat the eggs until frothy. Add granulated sugar and canola oil; mix well. Then stir in the pumpkin puree and maple extract.
- Fold the dry ingredients into the wet mixture until just combined.
- Pour the batter into a greased loaf pan and sprinkle the topping evenly over it.
- Bake for about 50 minutes or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Let it cool completely before slicing for the best texture. You can add a splash of vanilla or almond extract for extra flavor.
