- 65 grams powdered sugar, plus extra for dusting
- 1 teaspoon vanilla extract
- 250 grams all-purpose flour
- 1/4 teaspoon fine salt
- 80 grams maraschino cherries, drained and finely chopped

- Gradually stir in the flour and salt, mixing until the dough just comes together.
- Fold in the chopped maraschino cherries and mini chocolate chips (if using).
- Wrap the dough in plastic wrap and refrigerate for at least 60 minutes until firm.
- Preheat the oven to 165°C (325°F). Roll the chilled dough into 2.5 cm balls and place on parchment-lined sheets, flattening each gently.
- Bake for 14-16 minutes until edges are barely golden.
- Transfer to wire racks and dust with powdered sugar while warm.
- Allow cookies to cool completely before serving.
Notes
For best results, ensure butter is properly softened and do not overmix the dough. Chilling is essential for proper shaping.
