Description

Ingredients

  • 6 hard-boiled eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Cajun seasoning
  • Chopped green onions (for garnish)
  • Paprika (for garnish)

Instructions

  1. Slice the hard-boiled eggs in half and remove the yolks, leaving the egg whites intact.
  2. Mash the yolks and mix with mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  3. Spoon or pipe the yolk mixture back into the egg whites.
  4. Sprinkle with Cajun seasoning and garnish with chopped green onions and paprika.
  5. Chill in the refrigerator for at least 20 minutes before serving.

Notes

For a richer filling, substitute some mayonnaise with Greek yogurt. Adjust spice levels by selecting milder Cajun seasoning.
