Description

A romantic one-pot dish featuring succulent chicken, chewy orzo pasta, sun-dried tomatoes, and spinach in a creamy sauce.


Ingredients

  • 650 g chicken breast, skinless and boneless, chopped
  • 1 tbsp olive oil (or oil from sun-dried tomatoes jar)
  • 3 garlic cloves, peeled and crushed
  • 170 g sun-dried tomatoes, drained
  • 1 tsp oregano
  • 2 tsp paprika
  • Freshly ground black pepper, to taste
  • 250 g orzo pasta
  • 650 ml hot chicken stock
  • 150 ml double cream
  • 120 g spinach
  • 50 g Parmesan cheese, grated

Instructions

  1. Heat the olive oil in a large, deep frying pan over medium heat. Add the chicken pieces and sauté for about 5 minutes until browned.
  2. Reduce heat to medium-low and add garlic, sun-dried tomatoes, oregano, and paprika. Stir for 3-5 minutes.
  3. Add orzo, hot chicken stock, and black pepper. Cover and let cook for about 10 minutes, stirring occasionally.
  4. Lower heat and add spinach and cream. Stir and cook for another 1-3 minutes until spinach is wilted.
  5. Turn off heat and stir in Parmesan cheese until melted. Serve immediately.

Notes

Serve with crusty bread and a side salad for a complete meal. Can be customized with extra vegetables or a dairy-free cream alternative.
