- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat, then sauté chopped onion and garlic until translucent.
- Add sliced carrots and chopped celery, stirring for about 5 minutes to develop flavors.
- Add chicken breasts and chicken broth; bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove chicken, shred, and return to the pot.
- Stir in heavy cream and Italian seasoning, and season with salt and pepper before simmering for an additional 5 minutes.
- Serve warm, garnished with fresh parsley.

For a lighter soup, substitute half of the heavy cream with low-fat milk or omit it for a brothier version.
