Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat, then sauté chopped onion and garlic until translucent.
  2. Add sliced carrots and chopped celery, stirring for about 5 minutes to develop flavors.
  3. Add chicken breasts and chicken broth; bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove chicken, shred, and return to the pot.
  5. Stir in heavy cream and Italian seasoning, and season with salt and pepper before simmering for an additional 5 minutes.
  6. Serve warm, garnished with fresh parsley.

Notes

For a lighter soup, substitute half of the heavy cream with low-fat milk or omit it for a brothier version.
