Instructions
- In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned.
- Add the onion, garlic, carrots, and celery, cooking until the vegetables are softened.
- Pour in the chicken broth and canned tomatoes; bring to a simmer.
- Stir in the heavy cream and Italian seasoning.
