Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh spinach, for garnish
  • Parmesan cheese, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until browned.
  2. Add the onion, garlic, carrots, and celery, cooking until the vegetables are softened.
  3. Pour in the chicken broth and canned tomatoes; bring to a simmer.
  4. Stir in the heavy cream and Italian seasoning.
  5. Season with salt and pepper to taste.
  6. Cook for an additional 10-15 minutes until the soup is heated through.
  7. Garnish with fresh spinach and Parmesan cheese before serving.

For a lighter soup, substitute heavy cream with half-and-half or a plant-based cream.
