Description

Delightful cookies with a gooey marshmallow center and rich chocolate coating, reminiscent of hot cocoa.


Ingredients

  • 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups (188g) all-purpose flour (spooned & leveled)
  • 1/3 cup (27g) natural unsweetened cocoa powder
  • 1/4 cup (40g) dry hot cocoa mix
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons (10ml) milk
  • 10–11 large marshmallows, cut in half
  • 8 ounces (226g) semi-sweet chocolate, finely chopped

Instructions

  1. Cream the butter, granulated sugar, and brown sugar until fluffy, about 2-3 minutes.
  2. Add the egg and vanilla, mixing until well blended.
  3. In a separate bowl, whisk together the flour, cocoa powder, hot cocoa mix, baking soda, and salt. Gradually add to wet ingredients, mixing until dough forms.
  4. Chill the dough for at least 30 minutes in the fridge.
  5. Preheat oven to 350°F (175°C). Roll dough into balls and place on baking sheets. Bake for 10 minutes, then press a marshmallow half into each cookie and bake for an additional 2 minutes.
  6. Let cookies cool slightly and flatten marshmallows. Melt chocolate and drizzle over cookies. Let chocolate set at room temperature for 30-60 minutes.

Notes

Store cookies in an airtight container. To maintain marshmallow softness, place a slice of bread in the container.
