- 1 pound boneless, skinless chicken thighs or breasts
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 2 cups cooked white or brown rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- Salt and pepper, to taste
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken pieces and marinate for at least 30 minutes.
- Preheat your grill or skillet over medium heat, then cook the marinated chicken for 6-7 minutes on each side until fully cooked.
- Let the chicken rest for 5 minutes to retain its juices.
- In a separate bowl, mix the Greek yogurt, lemon juice, olive oil, minced garlic, and fresh dill. Season with salt and pepper to taste.
- Assemble the rice bowls by adding cooked rice, toppings of grilled chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Drizzle with tzatziki sauce and garnish with parsley.
Notes
Marinate the chicken longer for more flavor; serve with colorful presentation for an appealing look.
