- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, packed
- 1 cup chicken broth
- ½ cup heavy cream
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh parsley, for garnish
- Grated Parmesan cheese, for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken pieces, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add the diced onion and cook for 3-4 minutes until translucent. Stir in the garlic and cherry tomatoes, cooking for an additional 2 minutes.
- Pour in the chicken broth and bring to a simmer. Add the orzo and cook according to package instructions, stirring until al dente, around 8-10 minutes.
- Turn down the heat to low and stir in the heavy cream, oregano, and spinach. Mix in the cooked chicken and heat through for 2-3 minutes.
- Garnish with fresh parsley and Parmesan cheese before serving.
Notes
Use low-sodium broth to control saltiness and feel free to add additional veggies for enhanced nutrition.
