- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- ½ cup cherry tomatoes, halved
- ¼ cup Kalamata olives, sliced
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- ½ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- Juice of ½ lemon
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic, sautéing until fragrant and softened.
- Introduce ground beef, breaking it apart as it cooks until browned, draining excess fat if necessary.
- Stir in the chopped zucchini, bell pepper, and halved cherry tomatoes. Cook for 5–7 minutes.
- Incorporate Kalamata olives, oregano, cumin, paprika, salt, and black pepper. Cook for an additional 2-3 minutes.
- Remove from heat, fold in crumbled feta cheese and parsley, then squeeze lemon juice over the stir fry.
