- 4 tablespoons avocado oil (divided)
- 1½ pounds ground turkey
- 3 tablespoons Middle Eastern seasoning (cumin, coriander, paprika)
- 1 English cucumber (diced)
- 1 to 2 cups cherry tomatoes (halved)
- 1 cup feta cheese (crumbled)
- Steamed rice or chopped salad greens (for base)
- 2 lemons (juiced)
- Extra-virgin olive oil (for drizzle)
- Hummus (for dollop)
- Plain yogurt (for dollop)
Instructions
- Heat 2 tablespoons of avocado oil in a large skillet over medium heat until it’s hot.
- Add the ground turkey and break it into small pieces. Cook until fully browned, about 7 to 10 minutes.
- Sprinkle in the Middle Eastern seasoning and mix well. Cook for another 2 minutes.
- Toss the diced cucumber and halved cherry tomatoes with extra-virgin olive oil and lemon juice in a bowl.
- Assemble your bowls with a base of rice or greens, layer the turkey, and add the cucumber and tomato mixture on top.
- Finish by adding crumbled feta, a dollop of hummus, and yogurt on top, then drizzle with olive oil and lemon juice.
Notes
For a lower fat content, consider using ground turkey breast. Customize toppings to your taste!
